ORANGE AND APRICOT TRUFFLES
These delicious little morsels have a very unusual taste, and will satisfy that sweet tooth craving as well as being not so fattening if weight is a problem.
They are quick and easy to make, and do not require any cooking. They also have no chemicals in them so are far healthier than any of the shop bought similar sweet snacks or biscuits.
Serve them with coffee or tea, or as a snack, an afternoon tea, or you can even include them in a high tea for friends.
They will last for ages if you store them in the fridge till they are eaten! Though at my place they do not really last for long.
Preparation Time: 15 minutes
Cooking Time: No cooking
Makes: 15 truffles
Ingredients
12 sponge fingers
½ cup dried apricots, finely chopped
1 orange, rind finely grated, juiced
¼ cup apricot jam
¼ cup cocoa powder
Method
Roughly chop the sponge fingers, and put them in a food processor or similar, and process until they form fine crumbs.
Transfer them over to a large bowl.
Add the dried apricots, orange rind, 2 tablespoons of orange juice and the jam.
Stir this mixture until it is well combined.
Place the cocoa into a shallow dish, and using wet hands, roll 2 teaspoonfuls of the mixture into small balls.
Roll these carefully in the cocoa.
Place them in an airtight container, cover, and refrigerate for about 2 hours, or overnight if time permits.
Remove them from the fridge about 30 minutes before serving, and don't eat too many!
