Vegetarian Filled Rice Paper Rolls

Rice paper rolls are a bit fiddly but I think they are SO worth it.  With vegetables (or meat) wrapped in a wafer thin pancake type of rolls, there is no limit to your imagination when creating different versions of these! They are generally with Asian inspired vegetables, however you could really making anything inside these tiny paper thin pancakes.  I have even made a dessert using them, and they were delicious as the pancake is not sweet and the sweet of a dessert balances it out to give a great sweet! They can also be vegetarian or not!  They are often made with prawns, which is a recipe I often make, however in this instance I decided to be "vegetarian" for the night!  My partner is a meat and veggies person, and was not impressed that I left out the meat part, however he even admitted that they tasted very good. AVOCADO & BEETROOT SALAD WITH CHIA SEED DRESSING

This is an unusual salad and is has all healthy ingredients in it. Eat it as a whole meal or as an accompaniment with a meal. If you don't have both sorts of mustard in your fridge, just use all Dijon. Preparation Time: 10 minutes Cooking Time: 1 hour minutes Makes: 2 servings Ingredients 1 large beetroot, washed 1 avocado, not too ripe 3 tbsp chopped walnuts 1 tbsp olive oil 1 tsp grain mustard 1 tsp Dijon mustard 2 tsp Apple Cider vinegar 2 tsp freshly squeezed lemon juice ½ tsp agave nectar (you could use sugar) 2 tsp chia seeds Method Preheat oven to 200°C/180° fan forced. Wrap the beet in foil and bake for about an hour, until tender.  Set aside to cool, and then remove skin. To prepare the dressing, combine olive oil, two mustards, vinegar, lemon juice, agave and a bit of salt in a jar with a lid.  Shake vigorously, add chia seeds and let sit for a few minutes. Meanwhile, thinly slice the beetroot and arrange slices on 2 salad plates....

EGG & AVOCADO IN A POACHED SALMON SANDWICH

Fresh salmon is one of the healthiest fish you can eat, as it is packed full of Omega 3 which does a lot towards well being.  Salmon also has important amounts of the antioxidant, amino acid taurine, and the heart-healthy vitamin B12, and the omega 3 fatty acids can help as an anti inflammatory if you have aches and pains. Ideally, we should be eating some sort of fish at least twice per week, but I know I do not eat fish more than about once a fortnight.  However I am always trying to invent new recipes using salmon as it is an easy fish to cook, as long as you do not over cook it. Salmon is better slightly undercooked, and it then almost melts in your mouth. This is a great recipe if you do not feel like cooking a full meal, and it is also easy to make, and impressively delicious. FISH AND AVOCADO BURGER

This recipe is great when you don't want to do a lot of work and it is quite low in calories. Also it uses only one frypan which is something I love, as I do not like doing hand washing, and I always hand wash my pots. I always take out some of the middle of the bread rolls, which means you get less calories and more room to put the fillings in.  I used long hot dog type rolls for this one,  however you can use an ordinary hamburger rolls. This recipe can easily be doubled for more people, and it is far healthier than buying a shop made burger. I used  white Snapper however any white fish would also work well for this delicious burger.
