Pad Thai with Fresh Salmon

Red salmon is one of the healthiest fish available partly due to the amount of Omega 3 fatty acids it has in it.  This recipe combines this salmon with spices and a base of rice noodles. It is not "hot" as in spicy but the flavour of the spices goes through the whole dish including the rice noodles.  It is not a difficult recipe to make, and is great for people who are not keen on eating fish by itself, as the flavours of the spices hides a bit of the fish taste! Buy the salmon fresh, and buying it skinless, although slightly more expensive, it is easier and no wastage. Potato and Quinoa Salmon Patties

I just love salmon or tuna patties.  I do not however like bought ones generally, as they usually have too much potato in them. I often make these little morsels of goodness as they are easy to make, always turn out, and can be teamed with just about any other food. I have read a lot about quinoa over the last few years, and quite honestly, do not really believe in all these new super foods which seem to be popping up almost every month!  There are just so many, and I feel a lot of them are "gimmicky", and while they may well be healthy, they are not the "be all and end all" which the media seem to turn them into. Nor do I believe in all the different diets - the only diet I have gone on is eating less quantity at each meal, cutting out in between snacks, and the 5/2 diet.  This one I did, not to lose weight, but for the other healthy benefits, as I have mentioned before in my recipes. SALMON FILLED WITH CRABMEAT

Once again, this is a recipe using the healthy fresh salmon.  It is full of Omega 3 which has many health benefits, and should be eaten regularly. This unusual recipe features beautiful pink salmon from Tasmania, and although it looks professional, it is surprisingly easy and quick to make. I normally buy the skin free salmon however bought one of the pieces this time with skin, and found this one was easier to fill, so would recommend this cheaper cut of salmon. I have accompanied it with slow baked potatoes in their jackets, topped with melted cheese, plus a few prawns. EGG & AVOCADO IN A POACHED SALMON SANDWICH

Fresh salmon is one of the healthiest fish you can eat, as it is packed full of Omega 3 which does a lot towards well being.  Salmon also has important amounts of the antioxidant, amino acid taurine, and the heart-healthy vitamin B12, and the omega 3 fatty acids can help as an anti inflammatory if you have aches and pains. Ideally, we should be eating some sort of fish at least twice per week, but I know I do not eat fish more than about once a fortnight.  However I am always trying to invent new recipes using salmon as it is an easy fish to cook, as long as you do not over cook it. Salmon is better slightly undercooked, and it then almost melts in your mouth. This is a great recipe if you do not feel like cooking a full meal, and it is also easy to make, and impressively delicious. BAKED CAULIFLOWER AND SALMON MEAL

Fresh salmon is supposedly very healthy as it is full of Omega3 which contributes to healthy brain function, and much more. It also contains protein, minerals and vitamins, which are good for overall health, and as such I am always on the lookout as to different ways of making this versatile fish. This recipe is ideal for children who are not so "fussed" about fish, as it does not have a strong fish taste, and it also has some vegetables included.  The vegetables are almost "hidden" so people who do not like eating vegetables on their own, may just like this way.
