Prawn and Quinoa Rice Paper Rolls

These are healthy spring rolls which are not fried, and therefore have no oil.  Rice paper rolls are easy to work with, and are an Asian speciality and available in the Asian isle of most supermarkets. The prawns have been roasted in the oven, and the quinoa boiled, plus the recipe has raw vegetables in it.  It therefore has many healthy elements to it and saves you making a salad.  They are great either hot or cold, on a buffet table, and I also made a dipping sauce with them. They are also good for lunch boxes, and are very versatile, and most importantly, my lovelies, they are very delicious!  I am often tempted to buy these, however even though they are a bit fiddly, they are quite easy to make, and you can virtually put in whatever filling you want.  If you don't eat prawns, substitute - anything goes with this recipe.  I also love cooking with Hoisin sauce as love both the smell and the taste of this Asian sauce. Spinach and Bacon Pie with Feta Cheese

This is a rich, very yummy tasting family pie, which is easy to make, and cannot fail! Pies are so much nicer when home made as against buying them, and particularly as you know what is going in them. You could use this as a buffet style meal where everyone helps themselves, or you could cut it into squares and serve. I served this pie with some rocket, spinach leaves, lettuce and mini tomatoes. Preparation Time : 20 minutes Cooking Time: 60 minutes Serves: 4-6 servings Ingredients 1 sheet Puff pastry 1 onion, chopped 1 potato, sliced thin (optional) 4 short cut bacon rashers, diced 250g pack frozen chopped spinach 5 eggs or 4 extra large 300 ml cream ½ cup grated cheese 100 g Australian style feta Cooking oil spray Instructions Preheat the oven to 170°C or 150° if it is a fan forced oven.  Spray a 20 cm pie dish with the oil.  Defrost the pastry and put it into the dish, bringing it up the sides - use 1 ½ sheets if you prefer thicker pastry....

Best Ever Chocolate Mousse

CHOCOLATE MOUSSE - what can I say!  I have not met anyone who does not like this. My chocolate mousse recipe is always much in demand as everyone loves it.  It has been handed down to me by my late best friend, and we used to make it often many years ago. Nowadays, I do not add any sugar to it as it does not need it though in the original recipe, it says to add a cup of sugar if using cooking chocolate. Chocolate is a bit like wine when you cook with it.  Use a good one, and your recipe will taste all the better for it.  I therefore am always on the lookout for Lindt chocolate at half price.  I use the 70% dark chocolate as that is healthier than plain dark chocolate. Breakfast Pizza

Pizza is not normally something you associate with breakfast however, as I love eggs, bacon and pizza, I decided to make one as a brunch. I don't have a cooked breakfast each morning but sometimes when I do, I like to try something different. I have tried bacon and eggs in many different forms, and they are a combination that never fails to please the pallete, and it can be served either as a savoury meal, or by adding maple syrup which goes wonderfully with these two magic ingredients. When you make these you can use Turkish bread rolls as these make a nice breakfast meal, though you could also use a large ordinary roll, or even a pizza base.  However I think for breakfast I would prefer as I have made it - with the Turkish roll. Baked Pineapple Rings

I am always on the lookout for things that my grandson likes to eat, as he eats little! One of the things he likes is pineapple, and as he loves the bought pineapple rings, I decided to make my own as they would then have less sugar and oil. I baked them instead of deep frying as they do when you buy them, and I always buy these when we get fish and chips. I have read that fish and chips and Coke Cola are the two most unhealthy foods we can eat, so, much as we love my fish and chips, we only have them every few months, and generally only when my grandson stays the weekend. He is such a bad eater, however, that he only eats chips - if we order something like Red Rooster, he still only has chips. So I thought this pineapple idea was a good one. COOKING DUCK BREAST

DUCK - I used to breed them, so now it is a bit odd to eat them! They are beautiful creatures, but then again if you think this way, we would all be vegetarians! Many people just love duck and some, of course, do not like it.  I think there is an art to cooking it, and I have cooked it over the years many way. One of my favourite meals, when I eat out is Peking Duck and you can read about some of the restaurants I have tried at this link , or this link . When done correctly, duck can be tender and delicious, however getting it right is not so easy. The latest way I am doing it is in slow oven, and baking it for longer than normal.  Getting the skin crisp is an art that I sometimes achieve and sometimes not.  I have even bought an Asian speciality to make the skin look like it does in the photos on the above links, however it was difficult to work with, went a nice colour but was still not crisp. Turkey Meatloaf Topped with Home Made Tomato Sauce

Turkey is a very low fat mince, is extremely cheap to use, and best of all, it has a lovely taste.  It is also very versatile, and I often cook using this mince. It is also an excellent source of protein and good if you are on a low fat diet. You can buy it at all supermarkets nowadays, and I usually buy 500 g, use half and have some always in the freezer. Often when I cannot think what to make for an evening meal, we have turkey balls with spaghetti, which is both easy to make, quick and delicious.  Having them on hand in the freezer is great for an emergency when I don't feel like being creative, or thinking about what to cook! In this instance I made the turkey into a "meatloaf" and as I was having one of my grandchildren here for dinner, I also minced some carrot, and a few other vegetables, which he could not taste.  He is not a good eater, and that is how we get him to eat vegetables - by hiding them in certain foods. I may "harp" about the 5/2 diet however I was fanatical about it for a few years. Not that I wanted to lose weight - it has other effects which include lowering blood pressure and more.  This worked well for me for a while, however eventually I had to go down to 6/1 as I found I was losing too much weight! Currently this is what I do - I eat my 500 calories just once a week instead of two though it has not had the good side effects that doing it twice had. Anyway this article is not supposed to be about a diet but about food that is suitable for someone who wants to eat healthy, low fat and low calorie food, which this is. The other advantage of this recipe is that I have heard and read that we "should" eat fish twice a week as it also has so many health benefits, the main one being the Omega 3.  Many of us take fish oil supplements to get our Omega 3 however I am a firm believer in eating and getting vitamins naturally rather than taking a pill. Make Your Chicken Parmigiana on the Stove Top

Chicken parmigiana is one of my favourite ways to do chicken, however it CAN sometimes be fiddly to make. But not now, my lovelies, here is an easy way to make it, AND it is an unusual dish with the addition of Ramen noodles, mushrooms and tomato- so not your ordinary parmigiana!  Parmigiana is generally also put in the oven as well as on the stove top. Ramen noodles are an inexpensive type of noodle and I find they are very versatile. This recipe is very tasty, easy and uses just one pot, making it quicker, and my favourite point of sale - less washing up! I served this with my mini pumpkin pies, and it was all so very "yummy" that I urge you to try it. Broccoli Salad with Chorizo and Cranberries

Salads are a favourite of mine, my lovelies!  However I do perhaps say many things are my favourites, as I love to eat. Which reminds me, do you eat to live, or live to eat?  Guess which one I am! Although this is a salad, I will sometimes have just a salad as my main meal as it is healthy and if you eat enough, quite filling. In this instance however, I  have eaten it with leftovers I had from my chicken filled with apricots , and the two meals married very well together. If you want to be really healthy, cut out the chorizo and make it vegetarian! Chorizo is a Spnash type pork sausage, and is not the healthiest of foods, as it is so processed, however once in a while I think Chorizo is fine, and it IS delicious. You could also use bacon instead of the Chorizo - well that is just as unhealthy and also very good.  I always use Short Cut bacon as this cut has little fat on it - so you see, even if you do eat bacon, you can buy one that is healthier! This recipe will have everyone coming back for seconds, as it just delectable. My visitors voted this a hit, and gave it an 11 out of 10, and quickly came back for more!  Sadly, there were no left-overs for me for the next day - it is quite rare that visitors ask for another lot of dessert, but this one with it's tart sweet taste is just one of these popular desserts that most people seem to love. I have made several different versions of a lemon dessert, however I think this one is the best. The flavour of the lemon mixed with cream, and the runny texture of the middle of the pudding, will make this dish a "stunner" for any visitors, or family.  Best make it for family, then you might get more yourself!
