Tuna and Spinach Mornay Pie

This is a family meal, and a good way to get children to eat vegetables, as they are hidden!  If need be, cut them up very small so they do not actually see them.  This is healthy, as it has tuna in it which is rich in Omega 3's. The taste of this meal is extra delicious, and quite easy to make with only 30 minutes of cooking time.  It can also be heated up easily in the microwave if you are making it for less people than five - I generally only cook for about 2 people but had visitors when I made this meal. I generally use John West large tins of tuna in spring-water, however tuna in brine will also be OK - I do not use much salt in cooking due to high cholesterol problem! Tuna and Caper Cheesy Burgers

This burger is almost too big to get your mouth around!  However, once you master this, you will find this a delicious recipe. Tuna mixed with capers and cheese are a very good combination, and even children will like this unusual burger. I made it as a main meal and therefore made the patty larger than normal.  I added salads to make it healthier, and served it with raw green peas, and extra lettuce. Vegetarian Filled Rice Paper Rolls

Rice paper rolls are a bit fiddly but I think they are SO worth it.  With vegetables (or meat) wrapped in a wafer thin pancake type of rolls, there is no limit to your imagination when creating different versions of these! They are generally with Asian inspired vegetables, however you could really making anything inside these tiny paper thin pancakes.  I have even made a dessert using them, and they were delicious as the pancake is not sweet and the sweet of a dessert balances it out to give a great sweet! They can also be vegetarian or not!  They are often made with prawns, which is a recipe I often make, however in this instance I decided to be "vegetarian" for the night!  My partner is a meat and veggies person, and was not impressed that I left out the meat part, however he even admitted that they tasted very good. EASY TUNA CURRY

If you cannot buy fresh fish, tinned tuna is a very good alternative for Omega 3 fatty acid, which supports your heart, brain and eyes. I have mentioned before in my recipes, that we are supposed to eat fish twice a week according to surveys.  I personally do not do this, and I DO use a lot of tinned tuna as I always have a large tin of it in the pantry.  I buy the one in spring water as against the one in oil. I always buy the brand, John West as it is dolphin friendly, and I like their products. They also produce a "light" tuna in spring water, which has less calories than the normal tinned tuna however I do not use this one for cooking. This is a mild, easy to make curry, is a low fat recipe and can easily be used as a "stand-by" when you want an easy meal. TUNA SALAD FOR DIETERS

Many of us go on different diets, however I am slim and do not need to go on a diet, so it was with hesitation that I went on this "new beaut" 5/2 diet.  I did this, not to lose weight but for the various health gains it supposedly had. I found this diet worked for these problems however, in my case, I lost too much weight, so eventually I had to stop this diet! I was on the 5/2 diet for several years, and this recipe is one that I used to make on my "fast" days where I could only eat 500 calories for the whole day.  This tuna salad would be about 150 calories - add a boiled egg for another 70 calories, and it is still a very low fat, low calorie meal. It is very quick and easy to make and requires no cooking - and best of all - IT TASTES VERY GOOD - I also sometimes add olives and chilies to taste. TUNA PATTY STYLE ASIAN FISH CAKES

These fish cakes are extremely economical as you use tinned tuna which I generally buy when it is on special, and they are scrumptious and easy to make - children would probably like them also, but you can always add some mashed potato if you want the tuna taste to be less strong. The second night I ate these, I used them in a hamburger with salad, cheese, tomato sauce and mustard. You could also add 1/2 tsp Thai curry paste, chilli paste, or grated ginger to the recipe to make them spicier. They're a good way to get kids to eat tuna because they don't have a strong tuna taste.
