Lime Butter with Biscotti

This is a rich dessert which I made into 3 portions, however the mixture is easily enough for four servings.  As I was on my own for this meal, I would have had to throw out if I made four, and did not want to waste the lemon butter! You can use a shop bought lime butter (or curd) and it will look more like a trifle then, as the bought one has yellow colour in it, and the layers will be more distinct and look more like a trifle! However, I much prefer my home made one, and you can see an easy recipe for lime curd or butter  here The home made one is really easy and quite quick, so if I have time, I would always make my own.  As you do not use a lot in this recipe, you would also have some left over for other uses! I am not a vegan, however I am avoiding making recipes that have processed sugar in them.  This can be quite difficult at times, as all my favourites do have sugar in them. Unfortunately I have a sweet tooth, so after being diagnosed with high sugar levels, I decided I had to stop eating cakes, biscuits and desserts which I had on most days! I then went down the path of making sweet morsels that had fruit in them.  I realise that the fruit still has sugar in it, however it is not processed and therefore possibly healthier than ordinary sugar. I mostly use coconut sugar or similar in these recipes, however am now making ones that do not require any added sugar as the sweetness comes from the dried fruit.  These are not as sweet as commercial cakes and biscuits, however in time I have got used to having bliss balls, or raw sweets to satisfy my sweet tooth. PEACH SALAD WITH COTTAGE CHEESE

This is a simple, yet quite filling, salad that works as a main meal too.  I often have a salad as a main especially when the ingredients are a balanced meal.  This is especially good in summer and I like to eat it on my back patio area on a hot night, as it is refreshing. It tastes better with fresh peaches however it also works just fine with canned peaches, as I've used in this case. Using tinned peaches means you can make this salad at any time of the year, and they are far cheaper than fresh ones.  Note:  If you use tinned peaches, the recipe is slightly sweeter than if you use fresh peaches. This is also a fast recipe which requires no cooking, so can be made at the last minute as it is so quick! PEAR, FETA AND BEETROOT SALAD - NO COOKING

Ever have one of those nights when you just do not feel like cooking a large meal? I have this quite regularly, and in this instance I decided to make this salad and use it as a main meal instead of an accompaniment. Although it IS a salad, we had it one night as a full meal, as it has vegetables, fruit and cheese and is therefore quite balanced. The combination of these ingredients is unusual and very good.  It is also very healthy as beetroot has many health qualities as they are high in immune boosting Vitamin C, figre and essential minerals, all of which are important for overall health.  Beetroots also contact folate which is a Vitamin  B.   No cooking required for this recipe! Prawns are a very versatile food, however the downside of prawns is that if you overcook them, they become hard, and chewy. Whenever you are making a prawn dish, make sure you only cook the prawns for a few minutes and particularly if they are eaten on their own, like this dish is, and not in with other ingredients. This is another easy recipe that is quick to make and works great as an entre, lunch or as a main meal. It also looks very professional, yet it does not take long to prepare, and it is sure to impress your visitors as it looks so professional.
