APPLE TOASTED LUNCH SANDWICH WITH PEANUT BUTTER & BACON

This toasted sandwich is packed with sauteed, slightly sweetened cinnamon apples and peanut butter.  Once again I am using peanut butter in a recipe as well as bacon.  Bacon is one of the most versatile foods as you can cook it with either sweet or savoury, and there is so much you can do with this product. Although this is slightly messy to eat, this toasted sandwich will please both children and adults alike. It is quick to make and could even be eaten as a breakfast or a brunch for the whole family. POTATO SALAD WITH PEANUT BUTTER

Potato salad makes a perfect side dish, or snack, however I ate this one with bread and some raw salad as a main meal. I often eat potato salad and you will find several recipes on my blog for different versions of potato salad. I like anything with potatoes in it and my recipes will reflect this - I far prefer potatoes to the sweeter, more healthy sweet potatoes! Potato salads are also great to take on a picnic with some thickly sliced buttered bread! This recipe has no mayonnaise in it like a conventional one, and is a nutty version of a conventional potato salad. Once again, I have used one of my favourites, peanut butter and I now always buy the "no added sugar" version of this amazing ingredient. CORIANDER CHICKEN AND THAI CURRY PEANUT SAUCE

This sauce has a delicate flavour and you can make it as hot as you want by adding more of the Curry Paste, and the quantities in this recipe is for a mild dish. Once again, I have used that versatile food, peanut butter.  It goes well with sweet and savoury foods and I use it often, apart from eating it on toast! Thai curry is usually delicious, and the addition of the peanut sauce and the coriander make it an excellent choice for a meal, and it is even better when heated up the next day or two. CHICKEN WALDORF WRAPS WITH PEANUT PASTE/BUTTER

This is an unusual combination and will be sure to impress your visitors! It is VERY tasty and although the ingredients are unusual together, they mix together with a very pleasing result. Peanut butter is another very versatile ingredient that I use regularly, as it goes with both sweet and savoury meals, however, beware that the majority of bought peanut butter contains a lot of sugar.  I have now started buying a more "natural" one which is not as sweet as the normal one. For the chicken, I used the chicken left over from my chicken soup which I make regularly in several different forms.  The slow cooker is perhaps my favourite as the meat just melts in your mouth after cooking for 20 or so hours, and is then perfect for this recipe. However, if you have no cooked chicken leftovers (I freeze mine always till I need it), then just buy any cut of skinless chicken and cook it until it is tender, or you even have the alternative of buying cooked chicken meat nowadays. ...
