Prawn and Quinoa Rice Paper Rolls

These are healthy spring rolls which are not fried, and therefore have no oil.  Rice paper rolls are easy to work with, and are an Asian speciality and available in the Asian isle of most supermarkets. The prawns have been roasted in the oven, and the quinoa boiled, plus the recipe has raw vegetables in it.  It therefore has many healthy elements to it and saves you making a salad.  They are great either hot or cold, on a buffet table, and I also made a dipping sauce with them. They are also good for lunch boxes, and are very versatile, and most importantly, my lovelies, they are very delicious!  I am often tempted to buy these, however even though they are a bit fiddly, they are quite easy to make, and you can virtually put in whatever filling you want.  If you don't eat prawns, substitute - anything goes with this recipe.  I also love cooking with Hoisin sauce as love both the smell and the taste of this Asian sauce. Fish and Prawn Pie Topped with Mashed Potatoes

Fish pie on it's own can sometimes be a bit tasteless.  So because I love prawns, I decided to add some prawns to a fish pie. Now, I have to admit I tried this twice as it did not turn out the first time!  This was really annoying as I wasted the prawns, but it made me more determined to get it right the second time. This fish pie is made more tasty by the addition of  these king prawns.  The two textures go very well together, and the prawns are nice and soft if not overcooked.  I have served it with my  quinoa salad . If you do not like prawns, I would put some soy sauce in, or extra salt and pepper, or even a bit of chili or curry to give it some extra taste. Or, the prawns could be replaced with a similar quantity of extra fish if you do not like prawns. Barley & Rice with Prawns & Smoked Salmon

Barley and brown rice with honey soy prawns and smoked salmon is an unusual recipe. I have used staples that I always have in the pantry and thrown them in together to make a delicious meal! This is a healthy recipe with the addition of some barley, cooked in with the brown rice. I have used the large Australian Tiger prawns for this recipe, however any raw prawn is OK as long as you do not overcook them.  Overcooking prawns makes them tough and chewy, and they are far nicer if just cooked for a few minutes only. Prawns are a good source of protein, are low in saturated fat and calories, and this makes them a healthy food. They can also help prevent heart diseases due to the Omega 3 fatty acids which they contain.  And nowadays they are not so expensive as they used to be, and you can buy several varieties, though I only ever buy Australian ones. Prawns and Chorizo on Wilted Spinach

This is a one pot recipe that can be served for any occasion as a meal, or even as an accompaniment to something else. I have added a hint of chili making it slightly spicy, however this can be left out if you are making it for the whole family, as it is still very tasty with the flavours of chorizo, prawns and vegetables. I like food that has a bit of a "kick" in it, and often add chili or a hot sauce to recipes I am making.  I also have fresh chilis on hand often as a friend grows these and has an abundance of them. This recipe is served on a bed of wilted spinach and is a balanced meal having the vegetables and prawns all together.  I hate washing up, so I love to make recipes that use only one pot! Prawns are a very versatile food, however the downside of prawns is that if you overcook them, they become hard, and chewy. Whenever you are making a prawn dish, make sure you only cook the prawns for a few minutes and particularly if they are eaten on their own, like this dish is, and not in with other ingredients. This is another easy recipe that is quick to make and works great as an entre, lunch or as a main meal. It also looks very professional, yet it does not take long to prepare, and it is sure to impress your visitors as it looks so professional.
