Raw is currently the rage in cooking!  I have made some interesting recipes, though I have to admit some of them have failed! It is not so easy to get the right quantities of ingredients so that the sweet or dessert will not fall apart. I make a lot of bliss balls, as currently I am not eating much with refined sugar in them, and most of these raw desserts have no added processed sugars. This one also has chia seeds in it.  I love the texture of these seeds, and they are so easy to use in a variety of sweets and puddings.  They are also supposedly another of the new "super foods".  Their health properties include such things as Omega-3, antioxidants, fibre, iron and calcium.  They also contain some protein and are versatile in that they can be eaten both cooked or raw.  However they should be added to another food or soaked before eating them. PEACH SALAD WITH COTTAGE CHEESE

This is a simple, yet quite filling, salad that works as a main meal too.  I often have a salad as a main especially when the ingredients are a balanced meal.  This is especially good in summer and I like to eat it on my back patio area on a hot night, as it is refreshing. It tastes better with fresh peaches however it also works just fine with canned peaches, as I've used in this case. Using tinned peaches means you can make this salad at any time of the year, and they are far cheaper than fresh ones.  Note:  If you use tinned peaches, the recipe is slightly sweeter than if you use fresh peaches. This is also a fast recipe which requires no cooking, so can be made at the last minute as it is so quick! HONEY AND MASCARPONE PARFAIT WITH RASPBERRIES

This dessert is really one "to die for"! It is not for the dieters, but if you are on a diet, make it for your family or friends, and just eat a tiny bit just to get the taste of it. I use Violet Crumble Bar as this and the chocolate in it, gives it an extra level of flavour. The combinations of flavours in this recipe work so well, and the result is a rich, creamy tasting dessert which would impress anyone. It's easy to make and requires no baking.
