German Almond Bread - Dresden Mandelbrot

Mandelbrot is German and literally means almond bread.  It is a biscuit similar to the Italian biscotti, which is crisp, and sliced into slices. It does have quite a lot of sugar in it, however these 20 or so servings go a long way, and you would possibly only eat a few of these at a time.  Beware however, as they are very moorish. They last for ages, and are great in lunch boxes or served on the saucer with a cup of tea or coffee - well, if you USE saucers, of course! Mandelbrot or biscotti is usually baked twice, however "Dresden" Mandelbrot is only baked once. I also made some as a plain round biscuit instead of the loaf type that is typical -hence the two types in my photos! This recipe makes a large amount, and unless you have a very large family,  I would suggest halving it. CABBAGE ROLLS FILLED WITH CREAMY MASHED POTATOES

Cabbage rolls are traditionally a European dish filled with mince meat and/or rice.  For this recipe, I have changed the meat to potato mash with a creamy, cheesy sauce.  I have also added crispy pieces of bacon scattered on the top, however for a vegetarian dish, just omit this bacon. These are easy to make, though a little bit fiddly, however they are scrumptious and were very popular with our dinner visitors! FINYS TRADITIONAL JEWISH CHICKEN SOUP

This is genuine Jewish chicken soup, although you could add other things to it, and I mention these at the end of the recipe. It is extremely economical to make, and you can actually use any raw vegetables other than the ones on the list.  Make it and freeze it, as it freezes well, and is also handy for use in cooking when you need chicken broth.  You can also add other things like noodles, Knoedel and the like to this soup. It is once again a recipe that is only limited to your imagination.  It always works out no matter what you put into it and you cannot have a failure with this recipe. I usually make it the day before I want to use it, put it in the fridge and then skim off the fat before heating it up again. This is the real Jewish chicken soup that is meant to be "good for the soul".
