Apple Caramel Slice with Pecan Nuts

If you like caramel, you will love this recipe - it has apples in it so it can't be unhealthy!  Doesn't an apple a day keep the doctor away?

You could substitute a different nut for the pecans, however they DID give it an extra nice taste, and the combinations on this slice work brilliantly together.

As with much of my other baking, I have used coconut sugar as it is an organic product that is not real sugar and is not refined, and therefore healthier,  It is also not as sweet as sugar.

I have used bought caramel sauce in this instance, however you could make this yourself.

Preparation Time: 30 minutes
Cooking Time: 40 minutes
Makes: 16 servings

Ingredients
¾ cup butter, softened
1 cup coconut sugar - or brown sugar
1 cup plain flour
1 cup rolled oats
1 tsp cinnamon
½ tsp baking soda
½ cup finely chopped pecans
3 cups chopped unpeeled apples - about 3
¾ cup caramel topping
¼ cup plain flour
Vanilla ice cream, optional
Additional caramel topping, optional

instructions
Heat the oven to 170°C or 160° if fan forced oven.  Grease a 32 cm x 22 cm pan.

Chop the pecans before starting.

In an electric mixer or similar, beat the butter and sugar on medium speed until it is well mixed. Beat in 1 cup of the flour, oats, cinnamon, baking soda and pecans until well mixed and the mixture becomes crumbly.

Press half of the crumbly mixture in the bottom of the pan and press down to form a crust.  Keep the rest of the mixture for topping.

Slice the apples and spread over the crust in the baking dish.

In a small saucepan, heat ¾ cup caramel topping and ¼ cup flour.  Bring this to the boil, stirring constantly.  Boil for about 1 minute or until the mixture thickens slightly.  At this stage I HAD to stop and clean out the saucepan as a special treat for myself!

Drizzle this caramel sauce over the apples.

Sprinkle the reserved crumbly mixture on top of this.

Bake for 35-40 minutes, or until the top is a golden brown.

Cool the slice for about 30 minutes before slicing and serving, as it will break up less if you do this.

Top with ice cream and caramel topping if desired, and EAT.
