Quinoa With Almonds and Chia Seeds Salad

SO YOU WANT TO EAT HEALTHY?

Quinoa is one of the latest healthy seeds which can be cooked or sprouted, if you want a totally raw food.  It is supposedly a "super food" but then again, half the "new" foods that are brought out, are said to be "super foods".

Quinoa is said to be a great source of protein, and even  includes nine amino acids.  Quinoa is also low in fat and carbohydrates, making it great if you are on a diet!

In this recipe I have used another "super food" - Chia seeds.  So this, my lovelies, must be a SUPER recipe!

I also used almonds which have wonderful health properties, and this recipe tastes excellent, as well as being easy to make and obviously healthy.

You could eat it as a main if you are vegetarian, or have it as an accompaniment to a meat or chicken meal.

Preparation Time: 25 minutes
Cooking Time: 15 minutes
Makes: 3-4 servings

Ingredients
2/3 cup quinoa (any colour)
1/2 cup dried apricots, diced
2 -3 tbsp Chia seeds
1/3 cup almonds, roughly chopped

For the dressing
3 tbsp lemon juice
2 tbsp olive oil
2 tbsp honey
¼ tsp cumin
¼ tsp salt (optional)

Instructions
First rinse the quinoa thoroughly, this is important, even if the packet says it is rinsed.

Put water over the quinoa and bring to the boil over high heat.  Once it has boiled, reduce the heat, cover and simmer for  15 minutes or until most of the liquid is absorbed.  Quinoa will get little white "tails" as it cooks.

While this is cooking, soak the apricots in warm water for about 15 minutes, and then drain them.

Meanwhile cut the almonds up into small pieces.

Turn off the heat on the quinoa and leave it covered for about 5 minutes.

Drain the apricots, and combine the almonds, apricots and chia seeds.

Add the quinoa, and mix it all up.

For the dressing, add all the ingredients in a jar with a lid, shake this until the dressing is properly combined.

Pour the dressing over the quinoa mixture and mix well.
Serve with whatever you want or eat as a meal on its own.

I served it with my fish pie.
